The addition of smoke flavouring to the mellow character of this relatively young Gouda imparts a bold, full-bodied, savoury flavour. The dominant taste, as with most smoked foods, is often described as being somewhat “meaty” or pleasantly “woody”—though the base cheese retains its buttery, and slightly lactic aspects. The mouthfeel is smooth and rich, the colour pale and flaxen with a light, edible brown rind. Each log of smoked Gouda is wrapped with brown waxed paper, then coated with wax in the traditional fashion of Dutch Gouda.
Our Smoked Gouda has a very desirable melt, both oozy and stretchy, but not greasy. It makes an excellent base cheese for a baked Macaroni and Cheese, serves well on burgers, and can even be used to make a milder version of Fondue—imparting to any dish a warm, richly layered smoke-y character and savoury roundness. Smoked Gouda slices easily, and the bold flavour makes it a popular choice for inclusion in sandwiches, or for serving along with fresh fruits and vegetables, crackers, or bread.
