A classic addition to Cheddar: horseradish is a natural compliment to the already sharp and tangy flavour of this cheese. Matured long enough to develop a pleasantly well-rounded, savoury character—but young enough, still, that the texture is smooth and supple, the spicy, aromatic horseradish brings a bold kick to this otherwise subtly flavoured cheese.

Serve to best effect along with crudités—especially celery—apple slices, roasted beets, capers or dill pickles, Polish sausage, and roast beef or smoked buffalo meat.
