This well-rounded crowd pleaser is aged 10 to 12 months, and dredged in a bath of balsamic vinegar—the addition of which increases the acidity of the cheese, both emphasizing the naturally fruity, some citrusy undertones and characteristic sharpness, as well as pleasantly contrasting the salty, savoury body.
