This rather crumbly aged white Cheddar is beautifully marble with purplish veins of red wine, creating a very striking appearance. The Bothwell team has been crafting artisanal cheeses in the town which is their namesake, New Bothwell, Manitoba, since the 1930s, and it shows. This cheddar has a medium-strength, but very well rounded character; it is savoury, with a fairly dry mouthfeel, but a buttery finish.

The addition of red wine takes a front seat in the tasting profile, emphasizing the naturally subtle notes of fruity tang and acidity that round out the pleasantly complex sharpness of a good cheddar.
