Milk-type: Pasteurized Cow’s milk
Produced as a modified version of Danish Blue, using an extra measure of fresh cream—this cheese is both milder and softer than it’s traditional counterpart, with a buttery, pleasantly fatty mouthfeel and an understated, gently developed “blue” character. Not as salty as regular Danish Blue, nor as crumbly, it makes for a tantalizingly complex, delicately savoury counterpoint to dessert flavours. Serve with dark chocolate, strawberries, and roasted nuts—or melted over warm bread with thinly sliced pears.
