Bocconcini (singular Bocconcino) are small, fresh mozzarella cheeses. Like other fresh, Italian-style mozzarellas—as opposed to firm “Mozzarella”-style cheese—bocconcini is relatively moist, semi-soft and pliable with a “springy” consistency.
In keeping with the name, which in Italian means literally “small mouthfuls”: Bocconcini range in size from that of a boiled egg, at the largest, to cherry-sized and even smaller. Bocconcini are virtually unaged, with a very mild flavour and a scent of fresh milk, and usually packaged in lightly salted brine or whey. Bocconcini are somewhat spongy and absorb other flavours well. They are often served fresh with balsamic vinegar and olive oil drizzled over top, as part of a Caprese salad with cherry tomatoes and basil leaves, or softened over a traditional thin crust pizza. Serve as a part of antipasti, with a small cup of bold Espresso.
Beverage Pairings: Lesser-oaked Chardonnay, Sauvignon Blanc, light-bodied Pinot Noir.
