Description
Curds are the solid dairy product obtained by coagulating (curdling) milk. Sometimes described as “cheddar cheese curds”, coloured curd is in fact not cheddar at all—but rather the primordial ingredient thereof. Although curd can be pressed, shaped, and sometimes ripened to make various cheeses: it is popularly enjoyed as a snack it its own right. Fresh curds are beloved for their uniquely “squeaky” texture; pleasantly springy, chewy mouthfeel; and mild, salty, fresh flavour.
