Likely one of, if not the, world’s most famous blue cheeses: Blue Stilton, a protected destination of origin blue from the English Midlands, is a beloved British classic. Known for its flaxen to straw coloured interior, marbled throughout by a pale greenish-blue vein, and with a rustic, mottled crust—genuine Stilton can only be produced in the three counties of Nottinghamshire, Derbyshire, and Leicestershire. Stilton has a rich, well rounded flavour combining a pleasantly salty, sharp Cheddar-esque flesh with a robust blue vein. It boasts a complex flavour that wavers between pastoral earthiness and the yeasty sweetness of freshly baked bread.
Stilton is a welcome standby for cheeseboards, with charcuterie, crumbled over salads, or on top of steak and burgers. Try it along with a classic Ploughman’s Lunch of sliced onion, Branston pickle, hearty bread, and cold sausage.
Beverage pairings: Stilton is traditionally served with Port, especially during the Winter Holiday season and at Christmastime. It also pairs well with Scotch Whisky, and with dark beers—particularly Dry Stout or Irish Porter.
