Crotonese hails from Calabria, a region of Southern Italy—described as the “toe of the boot”. A firm, dry cheese with a nutty-sweet, salty, slightly fruity flavour: Crotonese is traditionally (and still, in Italy) made from pure sheep’s milk, though versions made abroad are now often made from cow’s milk or a blend of the two.
