Friulano cheese is a Canadian-made, Italian-style cheese named for the Friuli region of Italy—from whence the cheese upon which it is originally modelled, Montasio, originates. Semi-firm, but more supple than Montasio, Friulano cheese is relatively mild, somewhat salty, with a delicate taste of hazelnuts and a fruity character. This interior ripened cheese is rather firm, though with a creamy mouthfeel, and pale yellow in colour. As it ages, it becomes drier and with a more pronounced “nutty” aspect—but still neither piquant nor pungent.

Easily sliced—Friulano makes an excellent addition to a classic Italian sandwich, layered with cold meats and dressed with spiced olive oil, or on an antipasti plate with your favourite Italian finger foods; pair Friulano with grapes; cold cured meats, espeically prosicutto or coppa; melon slices, olives, and pickled peppers.
