The chief ingredient in French-Canada’s now widely beloved innovation in comfort food, Poutine, curds are the solid dairy product obtained by coagulating (curdling) milk. Sometimes described as “mozzarella cheese curd”, white curd is in fact not mozzarella at all—but rather the primordial ingredient thereof.
Although curd can be pressed, shaped, and sometimes ripened to make various cheeses: it is popularly enjoyed as a snack it its own right. Fresh curds are beloved for their uniquely “squeaky” texture; pleasantly springy, chewy mouthfeel; and mild, salty, fresh flavour.
