American Asiago is modeled after Asiago Mezzano from Italy. It is firm and slightly buttery, with a pale crumbly flesh. The flavour is fruity and tangy, with a sharp lactic aroma and finish. American Asiago wheels come wrapped in a brown-ish wax.
Beverage Pairing: Reds like Barolo and Chianti (Sangiovese), or a rich Napa. Cider, pilsner, cranberry juice and sparkling red grape juice.
