Description
Country of Origin: Holland
Milk-type: Pasteurized Goat’s milk
This blue-veined cheese from Holland, rather like a classic Dutch gouda in style is—unlike most blue cheeses and, for that matter, unlike most Goudas, made from goat’s milk instead of cow’s. Although less common than those versions made from Cow’s milk, blue-veined cheeses based on Goat’s milk are equally delicious. They tend to be less salty than their Cow’s milk counterparts, and usually with some of the subtle fruity and floral notes characteristic of goat’s cheeses generally.
The consistency of Blue Goat Hommage is smooth and supple, semi-firm with a buttery mouthfeel. The flavour profile is often compared to that of Roquefort, although it is less pungent, with a smoother, more mellow flavour.
