Canadian-made Crotonese cheese is made from cow’s milk, as opposed to the sheep’s milk used traditionally in Italy. As a result, this cheese has a more mellow character and slightly saltier taste than its European counterpart. Crotonese has a fairly dry mouthfeel, and a somewhat granular texture. The flesh of the cheese is cream to blonde in colour, the rind is pale and bears a distinctive ridged patterning.
