The youngest variety of Comté cheese that we carry: six month old Comté has a firm consistency, and a smooth mouthfeel with a buttery finish. The flavour is distinctly nutty, medium-sharp, with a pleasantly balanced salt content.
Young Comté tends to fall on the bright and fruity, mildly tangy, yeasty-sweet side of the tasting spectrum—without much of the earthy-grassy, or pungent flavours that may characterize older versions. Specific tasting and aromatic notes may include fresh strawberries, peaches and cream, walnuts, lemon peel, vanilla, baked bread with butter, frangipane, honey, or brioche.
