Our oldest version of this cheese: twenty-four month old Comté has a semi-hard consistency, a full-bodied aroma, and a dry mouthfeel. After two years of aging, the pate of Comté shows pronounced crystallization and is distinctly crunchy.
The flavour is bold, earthy, sharp, and nutty-sweet. Twenty-four month old Comté has decidedly complex, assertive flavour profile expressing an intensely flavourful and unique blend of woody, vegetal, herbal, and spicy characteristics. Specific tasting and aromatic notes may include vegetable broth, black coffee, dark chocolate, yeast, toasted nuts, aging leather, tobacco, moss after rain, hay, cracked peppercorns, mushrooms, or burnt garlic.
