Twelve month old Comté has a firm consistency, and a dry mouthfeel. After a year of aging, the pate of Comté begins to develop a slight crystallization and a pleasant crunch. The flavour is sharp and nutty, more robust than less ripe incarnations. Twelve month old Comté tends to express more flavours from the earthy and vegetal end of the spectrum; no longer as fruity or “bright” tasting as when it is younger, but still rich and sweetly yeasty—it has begun to develop a more pungent, complex, and sturdy flavour profile.
Specific tasting and aromatic notes may include chicory, baguette crust, plums or blackberries, burnt caramel, fresh cut grass, roasted onion, toasted nuts, turned soil, grated nutmeg, or melting butter.
