This slightly sweet, slightly nutty—distinctly bold and savoury cheese from Country Cork, Republic of Ireland, though it’s namessake is, of course, the Irish capital. Often compared to English Cheddar cheese, Dubliner is matured for at least one year. It is full flavoured, slightly sharp, and has a grassy—somewhat fruity—finish with notes of fresh cut straw, and apples. Serve with crusty, rustic breads—especially brown breads or soda bread, which play respectively, upon the sweet and sour notes beneath the savoury body of this cheese—or alongside pickles or chutney, Irish back bacon, black currants, and pear.
Beverage pairings: This cheese is best served with malty beer, especially Guinness or other stouts and porters, or with a full bodied wine such as Cabernet.
