Known as Queisu de Valdión (cheese from Valdeón) in the Leonese dialect of the Spanish province from which it hails, or more widely as either Queso de Valdeón, or “Blue Valdeon” in English: this robust Spanish blue cheese is manufactured in the municipality of Posada de Valdeón, in the Nortwest of the autuonomous community of Castile and León. One of the most famous exports of León’s distinctive regional cuisine, Blue Valdeon is a rather intense-tasting blue cheese—throughly veined with blue-green mould, and heavily pocked with small crevices within which thicker blooms grow. The flesh is sharp, biting, and slightly sour with a pleasantly woody character, and notes of grape must. In traditional fashion: each wheel is wrapped in sycamore maple leaves before being sent to market, affording to Blue Valdeon a uniquely rustic appearance. The charmingly, unusually pastoral appearance of this cheese makes it a favourite for serving on cheeseboards and with charcuterie—where it pairs especially with cured meats, especially intensely spiced beef or pork, red or green grapes, alongside crusty bread, olives, chopitos or grilled squid in oil, anchovies, and other intensely flavoured, especially salty, spicy, or bitter, tapas.
Wine Pairings: best served with a robust red from Bierzo or Tierra de León regions, or a Tempranillo. Alternatively, with Cabernet Sauvignon or Port.
