Of the multitude of different infused and flavoured cheddars developed over the years, blended with everything from various herbs and spices, dried fruits, hot peppers and chilies, to syrups, coffee, whiskey, and more, perhaps no pairing is as classic, even obvious, as that of wine and cheese. To that effect: this smooth, relatively mellow English cheddar of buttery aspect is gorgeously marbled throughout with veins of red wine, a treatment which, contrasted against the white base flesh of the cheese and the traditional coating of black wax, creates an altogether striking visual effect.

This cheddar is of medium strength, firm and full-bodied, but still with a buttery mouthfeel. The addition of wine serves to emphasize wonderfully the naturally subtle tasting notes of pleasantly acidic piquancy, and subtle tartness which characterize the background flavour of most cheddars—and brings those aspects to the forefront of the palate. Served alongside a glass of your favourite red and some fresh grapes, this Cheddar is sure to please.
