Likely one of, if not the, world’s most famous blue cheeses: Blue Stilton, a protected destination of origin blue from the English Midlands, is a beloved British classic. Known for its flaxen to straw coloured interior, marbled throughout by a pale greenish-blue vein, and with a rustic, mottled crust—genuine Stilton can only be produced in the three counties of Nottinghamshire, Derbyshire, and Leicestershire.

Stilton has a rich, well rounded flavour combining a pleasantly salty, sharp Cheddar-esque flesh with a robust blue vein. It boasts a complex flavour that wavers between pastoral earthiness and the yeasty sweetness of freshly baked bread.

Stilton is a welcome standby for cheeseboards, with charcuterie, crumbled over salads, or on top of steak and burgers. Try it along with a classic Ploughman’s Lunch of sliced onion, Branston pickle, hearty bread, and cold sausage.

Beverage pairings: Stilton is traditionally served with Port, especially during the Winter Holiday season and at Christmas-time. It also pairs well with Scotch Whisky, and with dark beers — particularly Dry Stout or Irish Porter.
