Produced by Roth Cheese, this “Swiss-inspired, Wisconsin-made,” semi-firm, blue cheese is made from whole, raw milk sourced from local Holstein and Jersey cattle. Pleasantly pungent, with an earthy but mellow character, slight mushroom notes and a creamy, buttery mouthfeel—it’s easy to see why Roth advertises this cheese as a “gateway blue”, with a flavour that turns blue-veined cheese “skeptics into connoisseurs”.

Tangy without being cloying or overpowering, Buttermilk Blue is well suited to a variety of dishes: whether you crumble is overtop of your favourite burger or steak; melt it on a pizza with poached pear, walnuts, and your favourite Italian cold meats; or use it in your go-to recipe for a blue cheese dip or dressing—you are sure to be impressed with the end result. On a cheeseboard, or as a part of a deliciously indulgent snack—Roth suggests serving their flagship blue cheese with a drizzle of honey on top, alongside figs or dates, and dark chocolate; and pairing with dark beers, a Riesling wine, or gin.
