This well-rounded crowd pleaser is aged 10 to 12 months, and seasoned with a chipotle pepper rub—the addition of which imparts a pleasantly pungent “spicy” flavour, and smoky character which intermingle beautifully with the already full bodied salty, savoury profile of the base cheese.
