This well-rounded crowd pleaser is aged 10 to 12 months, and then rolled in a layer of crushed peppercorn. In addition to imparting a pleasant, mildly-pungent heat and spicy aroma, this encrusting with black pepper gives the cheese a unique mouthfeel and emphasizes the already somewhat crunchy, crystalline texture.
